James Pimm came up with the idea of serving this liqueur of gin to help his customers digest the shellfish served in its oyster bar. The liquor is quite sweet, it is possible to replace the lemonade with sparkling water. To give it a bitter touch, replace the lemonade with a soft drink, or for more spice with Ginger Ale. For a spicy version add a Ginger Beer. Finally, for a Pimm’s Royal, a more chic drink, just add champagne.
